Quail carcass clean of feathers and viscera, wash, salt and whole fry in oil. Roasted quail remove from the oil and put in another pot. Pour a little water. Cover with finely chopped onions, carrots, tomatoes, potatoes, salt and pepper to taste. Simmer on low heat for 12-18 minutes. At lay the table sprinkle with chopped coriander.
