How to cook fried kidneys (of lamb or beef).

    Beef kidneys place for 2-3 hours in to cold water to eliminate unpleasant smell and bad taste. Thoroughly wash in hot water.
    Lamb kidney cut longitudinally into two parts. Clear from the top of the envelope. Thoroughly wash in cold water until the odor persists.
    Before frying the kidney cut into sticks. Straws salt, pepper and roll in flour. Fry in a pan with hot oil before gaining pink color. Before serving, sprinkle with parsley and lemon juice.
This dish also can be prepared from pre-cooked beef kidneys.
